We are all pressed for time, but that’s not an excuse to eat fast food. Fresh and healthful homemade food can be just as fast and this recipe illustrates that. The chicken recipe was adapted from the Stupid Easy Paleo blog and the broccoli recipe is one I’ve been making for a few years. Both are incredibly easy and tasty. I prepared 4 breasts so Jon and I could enjoy this dish for a few days.
Pan Fried Lemon Chicken
Ingredients
- 4 chicken breasts
- Juice of 2 lemons
- 2 teaspoons olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon paprika smoked sweet
- 1 teaspoon coconut oil
Preparation
Use a meat pounder to flatten the chicken breasts into one even thickness. In a plastic ziploc bag, combine the chicken breast, lemon juice and spices. Press air out of bag and seal. Allow chicken to marinate for at least 30 minutes.
Heat skillet over medium-high heat and add coconut oil. Cook the chicken for 4 to 5 minutes per side or until completely cooked through. When the outside begins to brown, the chicken is ready.
Sesame Broccoli
Ingredients
- 1 head of broccoli, cut into florets
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds
- 1/4 teaspoon paprika smoked sweet
- salt and pepper to taste
Preparation
Steam broccoli until tender. Remove from heat and place in a bowl. Mix in sesame oil, sesame seeds and spices. Toss to coat.
